Tasty Tuesday recipe- Blueberry – Rum Marinated Pork
Blueberry – Rum Marinated Pork
from the Caribbean Shopping Channel
Ingredients:
1 cup fresh blueberries
3/4 cup rum
1/4 cup lemon juice
2 garlic cloves
2 tablespoons brown sugar
1 tablespoon chopped sweet onion
1 tablespoon white vinegar
1 (16-ounce) package pork tenderloins
6 toasted bread slices
Directions:
1. In a food processor, process blueberries, rum, lemon juice, garlic cloves, brown sugar, onion and white vinegar until smooth, stopping to scrape down sides. Pour mixture into large plastic freezer bag; add pork. Seal and chill at least 4 hours.
2. Remove pork from marinade.
3. Grill pork, covered with grill lid, over medium heat (300° to 350°) 11 to 13 minutes on each side or until a meat thermometer inserted in thickest portion registers 155°. Remove from grill. Loosely cover pork with foil; let stand 10 minutes. Cut pork into slices, and serve over toasted bread.

Chuck E. Cheese Family Fun Center for the whole family- Giveaway ends 11-1
Chuck E. Cheese’s features musical and comic robotic entertainment, games, rides and play areas, as well as a variety of dining options including pizzas, sandwiches, wings, appetizers, a salad bar and desserts. The best part is the stamp procedure when you enter the building there is a greeter that stamps your kids hands along with your own hand with a special number so the kids can't leave the building without the adult withthe same number stamp. So now you can just let the kids be kids and run around and enjoy playing the games and rides without worrying if someone gonna steal them or they leave without permission.
We also love the food. The pizza is always so cheesy and tasty and cooked perfectly to perfection. I absolutely love the salad bar. There is so many variety to choose from and I love the freshness of the food on the salad bar. The wings and fries and sandwiches are always a great option too.
Then there are the games and rides. My kids all love playing the games and winning tickets for awesome prizes. Actually so do me, my mom, and my husband. I mean who can resist a little Skee-Ball and our favorite the Wheel of fortune coing drop. The little kids love the tunnels and slide and that it is free to play in that area so it keeps them busy when they are out of tokens.
Best of all though is the price. One thing you can always get coupons online on the website plus there are reward calendars to get your kids free 10 tokens. You can even play online games on the site and win actual tickets that they can redeem at the ticket counter the next time you visit Chuck E Cheese. For a family of 8 I spend around $50 total for a large pizza, 4 large drinks and around 100+ tokens. Which is awesome! We usually go to Chuck E Cheese every couple months. We always have so much fun and even my teens love it there which is great because they are usually the hardest to please!
The family dining and entertainment center opened a brand-new, 15,902-square-foot restaurant, gaming and party center in Salt Lake City. This is great for me that just means there is another one to visit close by. As the first Chuck E. Cheese’s in the area, the new store will introduce local families to the organization’s promise to parents of a clean, open environment, wholesome family fun for all ages, food made fresh and that every family who comes together leaves together. So if you haven't been to Chuck E Cheese or haven't been in a while it's definitely worth trying out. I am sure your whole family will love it!

Tasty Tuesday- Finlandia Swiss Chipolte Mac and Cheese

Serves 6
Ingrediants:
3 c cooked elbow noodles
3 c cooked elbow noodles
1 small onion diced
2t garlic minced
2 T butter
1/3c flour
3c skim milk
3/4c cottage cheese
4 packages sliced Finlandia Swiss, Light Swiss or Lacey Swiss (cut into small dices)
2c parmesan
1T chipotle peppers pureed
Salt & pepper
Seasoned bread crumbs
Instructions:
Preheat oven to 350 degrees.
Preheat oven to 350 degrees.
In a blender, add skim milk and cottage cheese. Blend until smooth.
In a sauce pot add butter, get hot add onion and garlic and brown. Add flour, mix well and then add milk mixture. Stir and let thicken for about 7 -10 minutes. Add chipotle pepper. Season with salt and pepper. Add cheeses and cooked pasta. Mix well and put into a casserole dish. Top with bread crumbs. Bake for about 25 minutes until golden brown and bubbly.

Sneaky Chef Foods

The hardest one for me to get my kids to eat like squash and zucchini. I have started making foods with them in it to where they don't know they are in there. My kids ate it and said it taste like spagetti sauce with a little different after taste but it was still good and they would eat it again. Overall I think for younger kids who haven't experience the other stuff as long or for kids allergic to nuts thses are awesome. Tasty Tuesday- Lemon Squash Bread
Lemon Summer Squash Bread
makes 2 loaves which yield about 16 slices total
Ingrediants:
-1 cup melted butter
-2 ¼ cups sugar
-¼ cup plus 2 Tbs lemon juice
-2 tsp lemon zest
-3 eggs
-3 cups flour
-1 tsp salt
-1 tsp baking soda
-1 tsp baking powder
-2 ½ cups grated summer squash (or zucchini)
-1/2 cup powdered sugar
-3tsp of lemon juice
Directions:
-2 ¼ cups sugar
-¼ cup plus 2 Tbs lemon juice
-2 tsp lemon zest
-3 eggs
-3 cups flour
-1 tsp salt
-1 tsp baking soda
-1 tsp baking powder
-2 ½ cups grated summer squash (or zucchini)
-1/2 cup powdered sugar
-3tsp of lemon juice
Directions:
1)Preheat the oven to 350 degrees. Prepare two loaf pans with baking spray.
2)Melt the butter in a small pan.
3)Combine the sugar and lemon juice and zest in a mixing bowl.
4)Add the butter and mix to combine.
5)Add the eggs one at a time and beat until the batter is light and fluffy, (about 2-3 minutes.)
6)Meanwhile combine the dry ingredients in a separate bowl.
7)Add the dry ingredients to the mixing bowl and barely combine into a batter.
8)Add the grated squash and mix until just combined.
9)Divide the batter between the two pans and smooth the tops with a spatula.
10)Bake the bread at 350 degrees for 1 hour.
11)Take the bread out and let cool until the pan is just cool enough to handle.
12)While the bread is cooling you want to make the lemon glaze.
13)Add the 1 Tbs of butter to a small pan and melt it.
14)Remove the pan from the heat and add the 3tsp of lemon juice. Whisk to combine.
15)Add the powdered sugar and whisk to combine.
16)Add the water to thin it to the right consistency.
18)Drizzle the glaze over the top of the loaf.

Success Jasmine Boil in Bag rice- review
We love Chinese food. We love rice! I don't always have the time to make the rice that takes forever to cook so when I don't I use boil in the bag rice which is awesome because its done in like 10 minutes and tastes wonderful. Now we eat all kinds of rice like brown rice, white rice and now our new favorite is Jasmine rice. Success has a new Boil in the bag Thai Jasmine Rice and it is absolutely heavenly.
I love that I can use this rice in every rice recipe I have and it turns out fabulous every time. It is so soft and fluffy and almost sweet. I have used it for stir-fry and for a yummy rice pudding. Success Rice Pudding Recipe
Ingrediants:
1 bag Success® Rice
1 can (12 oz.) evaporated milk, divided
1/3 cup sugar
1/4 tsp salt
1/2 cup raisins
boiling water
1 egg
1 1/2 tsp vanilla, cinnamon or ground nutmeg (optional)
Directions:
Prepare rice according to package directions.
Combine rice, 1 cup milk, sugar, and salt in medium saucepan. Cook over medium heat, stirring frequently, until thick and creamy, about 25 minutes.
Meanwhile, place raisins in small bowl. Add enough boiling water to cover raisins; let stand 15 minutes.
Beat egg with remaining milk in small bowl. Gradually pour into hot rice mixture, stirring constantly. Remove from heat. Stir in vanilla. Drain raisins, fold into pudding. Sprinkle lightly with cinnamon.
Serve warm or chilled.

Ingredients:
3-4 chicken breasts
½ cup barbecue sauce
1-2 apples, peeled and grated
Juice of 1 lemon
6-8 slices of bacon
½ cup barbecue sauce

1. In a small bowl, combine barbecue sauce, grated apple, and lemon juice.

3. Place wrapped chicken in a greased 4-5 quart slow cooker and top with BBQ sauce mixture.

Better Oats Oat Revolution Steel Cut Oats review
School is getting ready to start again and in my house of 8 we are always rushing around trying to get ready and eat in time to get out the door in time. I want them to eat a healthly and nourishing breakfast before school. One of our favorite is oatmeal. We love the instant pop it in the microwave and it is done kind. So when we got the chance to try the new Better Oats Oat Revolution Steel Cut Oats you bet we said yes!
I love steel cut oat but normally I have to cook it over night in the crockpot for it to be ready in time for school. So I love that Better Oats came out with the instant kind. It is only 170 calories, a 1/2 a gram of SAT FAT, 5g of protein, 8% iron and 4g of fiber and tons more stuff. So it is a great healthy option for breakfast. They even have Flax seed which is great for your dietary fibers! Best part is its ready in a little over 2 minutes! Then even have great flavors! I love the Maple and Brown Sugar and the kids love the Apple Cinnamon.

With exercising and trying to eat right I really look at what I eat. I try to increase the protein and lower the carbs, fat and calories. I love jerky of all kids but usually it is high in sodium and fat. So when I found out about Simply Snackin jerky I had to try it!

Tasty Tuesday- Chicken Avocado Wraps
Chicken Avocado Wraps
INGREDIENTS
· 2 cups chopped cooked chicken
· ½ cup cubed red pepper ( I used tomato)
· ¼ cup chopped cilantro
· ½ teaspoon hot pepper sauce ( I Omit this my kids dont like it)
· 1 avocado, peeled, pitted and diced
· 4, 8-inch flour tortillas
· 4 red leaf or Boston lettuce leaves ( I use spinach leaves)
DIRECTIONS
· Combine chicken, tomato, cilantro and hot sauce in a medium bowl and toss well.
· Add avocado and toss again.
· Divide chicken mixture among tortillas and top with lettuce leaves.
· Roll up and cut in half.

Avocado, Beet & Olive Oil Salsa
Ingredients:
¼ cup Carapelli Premium 100% Extra Virgin Olive Oil, plus more for coating
1 avocado
½ lime zest and juice
½ cup roasted red beets, peeled and juice reserved
2 tbsp red wine vinegar
1 tbsp soy sauce
¼ cup scallions, thinly sliced
¼ cup charred green chilies (like hatch, pablano or jalepeno)
Salt and pepper to taste
Directions:
In a mixing bowl, whisk together soy sauce, vinegar, beet juice, and Carapelli Premium 100% Extra Virgin Olive Oil.
Toss the avocado with lime zest and juice, and a gratuitous sprinkling of salt. Be as generous as you’d like – there’s always room for more zest at a party.
Combine all the ingredients, and toss and taste for seasoning. Enjoy this salsa with tacos, crispy nachos, or simply add some lettuce for a tasty salad.

Tasty Tuesday- Coconut Vanilla Ice cream recipe with or without ice cream machine
Coconut Vanilla Ice Cream
(Yield 1-1/2-quarts)
Ingredients
½ cup heavy cream
¾ cup caster sugar* (baker’s sugar)
1 tablespoon Nielsen-Massey Pure Vanilla Extract
2 (13.5-ounce) cans unsweetened coconut milk
½ cup sweetened flaked coconut, toasted (garnish)
Directions
In a small bowl, whisk cream, sugar and vanilla extract until combined; set aside.
Add coconut milk to a large glass measuring cup; add cream-sugar mixture and stir.
Assemble ice cream maker and pour ice cream mixture through filling hole. For the perfect ice-cream follow the manufacturer’s appliance directions.
While ice cream is churning, toast the coconut. Preheat the oven to 350°F. On a small rimmed baking sheet, evenly spread coconut; place in oven and toast, about 3 minutes, stirring occasionally, as coconut will toast quickly. Cool and store until ready to use.
*Caster sugar can be difficult to find. To make a superfine sugar, add granulated sugar to a mini food processor bowl and pulse until sugar is a superfine, but not a powdery consistency.
*** For those without an ice cream machine try one of these three low-cost techniques for creating ice cream:
The Bag Method:
Take a well-chilled ice cream base, put it in a plastic bag (Ziploc), which rests inside of a larger Ziploc bag filled with kosher salt and ice, then shake for a long while and end up with some pretty good ice cream. This is the method I do with my kids. It is fun and a great learning experience for them that is rewarding at the end!

Put ice cream base in a small coffee can, which rests in a larger coffee can, surrounded by rock salt and ice. Seal the tops and roll the can around.
The Stir-Every-30-Minutes Method:
Take custard base out of the freezer every half-hour and give it a vigorous stir until you have an ice-cream-like consistency. It’s the simplest of all techniques.

Shelf Safe Milk? Yes there is such a thing!- Review
My kids are huge milk drinkers. They love it plain, chocolate , strawberry, vanilla or whatever lol. We drink all kinds of milks as well like cows, coconut, almond and soy. My kids enjoy it all. The problem I have is my fridge is a old tiny fridge especially for a family of 8. I just don't have enough room for everything. So I need as much as I can get to be able to last on the shelf in storage. Now back to taste. Once it is cold and ready honestly you can even tell it was once stored on the shelf. you would think it is the refrigerated milk. My kids downed it and couldn't wait to buy more. I love that it now frees up more room in my fridge for other foods.
